Chocolate mousse with pistachio nuts

Ingredients for 4 people:

150 grams white chocolate, 100 grams bitter chocolate (minimum 70% cocoa), 3 eggs, 2 tablespoons sugar, 7 tablespoons pistachios, 25 cl whipped cream, 100 grams blueberries for decoration.

1. Chop the chocolate and 6 tsp pistachios. Heat the chocolate ‘au bain-marie’ (in a bowl over a pan with hot water.)

2. Whip the whipped cream, beat the egg whites until stiff and set aside. Beat the egg yolks together with the sugar in a bowl to a pale thick mass.

3. Mix the chocolate through the egg yolk and add the pistachio nuts.

4. Mix everything together. Then carefully fold the egg whites into the chocolate and pistachio mixture with a metal spoon.

5. Pour the chocolate mousse in the bowls and refrigerate for at least 3 hours.

6. Garnish the chocolate mousse before serving with the last tablespoon of pistachios and some blueberries if you like.
